– 16 medium cleaned shrimp

Preparation
Step 1
Boil a pot of water over medium heat. Once the water reaches a rolling boil, add the soba noodles and cook for 7–8 minutes, or according to the package instructions. After cooking, drain the noodles and set them aside.

While the noodles are cooking, heat the sesame oil in a medium pan over medium heat. Once the oil is hot, add the shrimp to the pan. Season with salt and black pepper, cooking for two to three minutes on one side before flipping the shrimp to cook for the same duration on the other side. The shrimp should turn pink and opaque when fully cooked. Remove them from the heat and cut them into small pieces, discarding the tails.
Step 3
In a small bowl, prepare the peanut sauce by mixing together the powdered peanut butter, water, soy sauce, crushed ginger, lime juice (if using), and sriracha (if using).
