Fab Fattoush Salad

This delicious salad combines tender chicken thighs, crispy Halloumi cheese, and fresh vegetables, making it a perfect dish for a quick and nutritious meal. In just 40 minutes, you can enjoy a vibrant and flavorful salad that’s sure to impress.

Ingredients

Salad

– 3 thin-skinned, boneless chicken thighs (approximately 5.5 oz.)
– 1 tablespoon olive oil
– 1 teaspoon za’atar
– Olive oil spray, as needed
– 2 oz. Halloumi cheese, sliced into ¼-inch-thick strips
– 4 cups salad greens of your choice (such as Little Gem lettuce, arugula, kale, or a combination)
– 6 radishes, halved and thinly sliced
– 12 cherry tomatoes, quartered
– 1 large cucumber, diced
– ¼ cup fresh dill, finely chopped
– ¼ cup fresh mint, finely chopped
– 8 pita chips, crushed

Dressing

– ¼ cup hummus
– Juice of 1 small lemon or ½ large lemon
– 1 teaspoon Dijon mustard
– Extra lemon juice, to taste

Preparation

Step 1

Preheat the oven to 350°F. In a bowl, mix the chicken thighs with olive oil and za’atar, then season with salt and pepper. Arrange the chicken on a baking sheet and bake for 10 minutes. Flip the thighs and cook for an additional 10 minutes. Once done, remove from the oven and allow to rest for at least 10 minutes before slicing into strips.

Step 2

While the chicken is baking, heat a small sauté pan over medium heat. Once hot, spray with olive oil and add the Halloumi strips. Cook for about two minutes, or until the cheese develops a golden crust on the bottom. Flip and cook for another two minutes until both sides are golden brown. Remove from the pan and cut the cheese into crouton-sized cubes. Set aside.

Step 3

Prepare the dressing by mixing all the dressing ingredients in a ramekin or small bowl. The dressing should be thick yet pourable.

Step 4

In a large salad bowl, combine the salad greens, radishes, tomatoes, cucumber, and herbs. Add the dressing and toss well to combine. Divide the salad between two bowls, topping each with Halloumi, chicken strips, and crushed pita chips. Adjust with extra lemon juice to taste.
